Easy to make ground Mexican ground beef “al pastor” recipe for tacos. Good idea for Taco Tuesday or parties. Al pastor it is one of the most popular dishes everywhere in México, and will be leaving your friends asking for more.

1 1/2 kilos pork ground meat ( about 3. 3 pounds)
4 chiles guajillos ( type of dried chili peppers)
1 chile ancho ( type of dried chili peppers)
1 1/2 cup of warm water ( to dissolve de annatto)
2 table spoons of annatto powder (you can use 20 g of annatto paste too)
2 tablespoons cooking oil (to fry garlic, onion and dried peppers)
3 tablespoons cooking oil ( to fry de meat)
4 garlic cloves
1/2 sliced white onion
1/2 teaspoon of oregano
1/4 teaspoon of cumin
1 tablespoon of white vinegar
Salt and ground pepper to taste
Ingredients for salsa verde (tomatillo sauce)
500 g of tomatillos (green tomatoes)
2 garlic cloves
1/4 white onion
Serrano peppers to taste ( I used 2)
1 cup cilantro leaves
1/4 small white onion chopped
1 diced ripe avocado
Remove, stems, veins and seeds ( you can use disposable gloves) and cut them into strips
Dissolve the annatto in 1 1/2 cup of warm water. Set aside
In a hot saucepan add 2 tablespoon of cooking oil, adde the garlic cloves and 1/2 sliced onion. Stir fry for 2 minutes.
Add the dried chiles strips and stir fry just for 15 seconds
Add the dissolve annatto using a strainer
Once it starts boiling cook for 5 minutes over medium- low heat to soften the chiles. Remove from stove and let it cool.
Then put it in the blender, add, 1/2 teaspoon of oregano, 1/4 teaspoon of cumin, 1 tablespoon of vinegar, salt, and ground pepper to taste. Blend it.
Add it to the meat, mix it, cover and refrigerate at least 2 hours to marinate.
In a hot pan add 3 tablespoons of cooking oil and put the meat in. Crumble the meat with a kitchen spoon.
Once the meat juices evaporates, add a little cooking oil as need and stir fry until golden brown. Ready!
To prepare de salsa verde de “tomatillo” (green tomatoes sauce)
In a pot with some water put 500 g of green tomatoes , with 2 garlic cloves, 1/4 of onion and jalapeños peppers.
Cook them just until tomates change color. Do not cook them after that, the sauce could get bitter. Let them cool and put it in the blender without the water.
Add 1 cup of cilantro leaves and blend.
Put the salsa in a bowl, add salt to taste, 1/4 of chopped onion and 1 diced avocado. Sauce’s ready!
Now roast some pineapple in a sauce pan
Enjoy your tacos with hot corn tortillas, the pineapple, salsa verde, limes, chopped onion and cilantro.
